October 1 is National Homemade Cookie Day and we thought we'd share our favorite homemade cookie recipe with you. We call them 'the worst' so people don't eat too many of ours all at once!
Ingredients
Makes 32 large cookies
2 eggs, brought to room temperature
1 cup butter, melted and then cooled for at least 5 minutes
1-1/2 cups light brown sugar, packed
1/2 cup granulated sugar
1 tsp vanilla extract
1/4 cup maple syrup
3-1/4 cup all purpose flour
2 tsp cornstarch
1 tsp baking powder
1 tsp baking soda
1 tsp salt
2 cups semisweet chocolate chips
Instructions
Prep Ingredients
Bring eggs to room temperature. Cut butter into 1 tbsp sized pieces and microwave in 10 second increments (stirring after each time) until it is just completely melted. Allow to cool for at least 5 minutes before using. Butter that is too hot will make the dough too runny.
Prep Dough
In larger bowl, whisk together melted butter, brown sugar, and granulated sugar. Add eggs, one at a time, stirring until combined. Stir in vanilla extract and maple syrup.
In medium bowl, whisk together flour, cornstarch, baking powder, baking soda, and salt. Gradually add flour mixture to wet ingredients, stirring until completely combined. Stir in chocolate chips.
Cover bowl with plastic wrap and chill for at least 30 minutes. Line baking sheets with parchment paper.
Bake
Preheat oven to 350 degrees. Meanwhile, scoop 2-3 tbsp of dough and roll into balls, making them slightly taller than they are wide. Place them about 2 inches apart on prepared cookie sheets. If preparing in batches, return any unbaked dough to refrigerator.
Bake about 13 minutes; cookies will appear to be a bit underdone, but edges should be just beginning to turn golden brown.
Allow cookies to cool completely on baking sheet. If desired, gently press a few chocolate chips on top of the hot cookies.
For next batch, do not place dough on an already hot cookie sheet, use another cool one.
